Under the guidance of Executive Chef Sonia Visman, the kitchen has earned a Michelin recommendation for its ability to weave creative spirit with the region's most genuine culinary traditions.
Chef Visman, a historical figure at the restaurant, leads the kitchen alongside Chef Pietro Cacciatori, who joined in 2012. Together, they work with local raw materials—Chianina beef, Cinta Senese pork, and wild boar—using techniques that range from contemporary to ancient, including wood-fired cooking. The menu changes seasonally to highlight the best of the territory, offering a contemporary take on Tuscan cuisine that is both authentic and current.
The restaurant sources from small, organic producers whenever possible. Stone-ground flours from traditional grains give homemade bread and pasta flavors long forgotten. Cheeses are often raw-milk from limited productions, and vegetables follow the same philosophy. The kitchen also accommodates gluten-free diets, preparing fresh pasta and bread.
