In the mountain village of Madesimo, Il Cantinone brings a Michelin star to the heart of the Alps. Chef Stefano Masanti, a writer and ambassador of Italian cuisine, draws on his international travels to create a style that is both deeply local and boldly contemporary. His cooking is rooted in the flavours of Valchiavenna—forest and freshwater—and opens outward to techniques and ideas from around the world. Every dish is built on seasonal ingredients, chosen daily, and balanced with precision.
