Bis blends the unpretentious warmth of a traditional Tuscan osteria with a contemporary, seasonal vision. The spring 2026 menu is structured around convivial categories: “Condividere” (to share), “Al pezzo” (by the piece), “La scarpetta” (the classic Italian bread-sopping ritual), and “Specialità” – dishes that reveal the kitchen’s true character. Each category encourages exploration and conversation.
The pasta selection reveals a dedication to craftsmanship. Bis sources from artisan pastifici across the peninsula, prioritizing “il sapore antico dei grani” – the ancient taste of grains – and sustainable farming. Tortelli with sheep’s milk ricotta and wild herbs, maccheroncini from Pastificio Martelli with a white ragù of coppa and Morelli artichokes, and spaghetto alla chitarra from Gerardo Di Nola with cuttlefish, cacio e pepe all showcase this commitment.
Sweet offerings are created by Matilde Morandi, pastry chef of the nearby Arnolfo Ristorante. She reimagines Italian classics: a pastiera with cooked wheat and orange blossom, mascarpone mousse with strawberries, and zeppole with pastry cream and sour cherries.
A five-course degustation path – starting with Condividere, moving through Scarpetta, a pasta, a vegetable dish, and a dessert – offers a focused way to experience the kitchen’s range. The wine list leans on Tuscan labels: Vernaccia, Chianti, Brunello, alongside Franciacorta and Trentino sparklers.
Bis is open for dinner (aperitivo from 18:00) and offers outdoor seating, a private room, and guest rooms for those who wish to linger in Colle di Val d'Elsa. It is seasonal Tuscan cooking at its most convivial – a place to share, remember, and exalt.
