The story
In the heart of Franciacorta, Dispensa Franciacorta is a restaurant that refuses to be defined by a single category. It is an osteria moderna, a wine bar, an enoteca, and a venue for events — all under one roof. The guiding principle, as the team puts it, is "innovative tradition in cuisine and hospitality." This approach has earned the restaurant a Michelin Recommended distinction for 2026, a recognition of the consistent quality and memorable experience it offers.
At the helm of the kitchen is Chef Daniele Provezza, who brings his reinvented traditional cuisine to life in the Osteria. He favours seasonal, fresh ingredients and products from the Franciacorta area, working them with great technique and imagination. The cuisine is described as "an intriguing intertwining of local excellences and ingredients from around the world," resulting in dishes with a unique personality. The open kitchen allows guests to watch the team at work.
The space itself is both polished and informal. The wine bar features a magnificent deli counter with a selection of cured meats and cheeses, many of them Slow Food Presidia and locally sourced. The osteria area, with its natural-wood tables, is surrounded by the bottles of the enoteca — over 700 labels, with a strong focus on Franciacorta sparkling wines alongside prestigious Italian labels. Large windows open onto a charming outdoor area, ideal for spring and summer dining.
Dispensa also offers a wine bar where the aperitivo is taken seriously, with a changing selection of wines by the glass. The enoteca doubles as a wine shop for those who want to take a bottle home. And the event hall can host up to 100 guests for banquets, with a full catering service available. Throughout, the goal is to make every guest feel at home in a place that celebrates the rich culinary and wine traditions of Franciacorta.
