The story
Just outside Cuneo, in the small town of Boves, Da Politano has been a family affair since 1945. It began as Osteria Fontanelle, founded by Rosa and Sebastiano, who turned their shared passion into a place where locals gathered over simple, honest food. The rapid growth of those early years soon transformed the osteria into the Hotel Ristorante Fontanelle, a larger venture that remained firmly rooted in family continuity.
In 1980, Claudio and Ivana took over the management, steering the restaurant through decades of hard work and steady evolution. The most recent chapter began in 2020, when their son Luca entered the kitchen. After years of experience in some of Europe’s finest Michelin-starred restaurants, Luca brought a new sensibility to the family’s cooking.
Today, Da Politano continues to evolve while holding onto the familiar warmth that has always defined it. The kitchen, guided by Luca, interprets the traditions of the region with a contemporary touch. The cuisine is best described as contemporary country cooking — rooted in Piedmontese ingredients and techniques, but lifted by a modern precision and lightness.
