The story
Da Sapì is the historic restaurant of Esine, a small town near Darfo Boario Terme in Valle Camonica. The Foppoli family has been at its helm for four generations. Today, Daniela and her husband Mauro continue the work, caring for both the hospitality and the kitchen. Their philosophy is rooted in tradition, care, and mastery: they source high-quality raw materials from local producers, respecting the seasonality of ingredients. The result is a cuisine that is both full-flavoured and wholesome.
The restaurant’s atmosphere is welcoming and unpretentious, reflecting the family’s dedication. Every day, bread and grissini are made in-house using sourdough and stone-ground flours. The menu changes with the seasons, offering a contemporary take on Lombardian cooking. Dishes such as trota marinata e affumicata (marinated and smoked trout) with its own sauce, casoncelli al burro versato (stuffed pasta with melted butter), and risotto with fig leaf extract, blue cheese, and salted lemon showcase the kitchen’s curiosity and respect for local flavours.
Michelin has awarded Da Sapì a Bib Gourmand, recognising its good quality, good value cooking. This honour aligns perfectly with the restaurant’s commitment to genuine food at fair prices. Whether you choose a wild game casserole or a simple pollo ruspante (free-range chicken) with carrot cream, each plate speaks of the land and the hands that prepared it.
The menu is updated regularly, with special offerings for holidays like Christmas and Easter. Desserts include homemade gelato made with milk from a local dairy, and a torta di rose with zabaione gelato. The wine list, too, is curated to complement the kitchen’s seasonal Lombardian cuisine. Da Sapì is open Tuesday through Saturday for lunch and dinner, and Sunday for lunch only.
