The story of La Speranzina begins with owner Stefano Giordani, who manages both the restaurant and the adjacent relais, welcoming guests alongside his family. His passion is evident in the very fabric of the kitchen: a 300-square-meter space carved directly into the lake’s edge. This "laboratory of taste" was entirely designed by Giordani and reopened in 2017 after a two-year renovation. The kitchen is a model of eco-sustainability, using only electric induction hobs and a computerized power management system that allows it to operate on a quarter of the energy a kitchen of its size would typically require. The result is a comfortable, pristine environment where the brigade can focus on creating fresh and elegant plates.
The menu is a dialogue between tradition and experimentation. Raw ingredients take center stage, with a careful selection of the best local produce—fresh lake and sea fish, Italian meats and game, local vegetables, and Garda olive oil—paired with more sought-after components.
