The story
In the heart of the Val di Sole, the Burba family has transformed a centuries-old mountain farmhouse into a restaurant that feels both rooted and refined. Gianpaolo and Paola took over the family business in 2019, but the story began thirty years earlier, when Gianpaolo’s parents, Arrigo and Claudia, first turned the old maso into a welcoming restaurant with traditional mountain furnishings.
The result is a space with four dining rooms, each with its own character. The main room is warm and open, while upstairs three smaller, more intimate rooms offer a quieter setting. From the tables, guests look out toward the Dolomites – a backdrop that shifts with the light and the seasons.
The cooking is Alpine country cooking, grounded in the ingredients of Trentino Alto Adige. The menu changes with what is available, but recent dishes give a clear sense of the kitchen’s direction: a tartare of Trentino beef with figs and local cheese, homemade ravioli filled with game, or a roasted duck breast with glazed chestnuts. The ingredients are local, the techniques precise, and the flavours direct.
This approach has earned Maso Burba a place in the Michelin guide, where it is listed as Recommended – a recognition of the consistency and clarity of the cooking.
The wine list is curated to match the food, and the restaurant also offers gift cards and private dining for celebrations. Pets are welcome, and the team asks guests to let them know in advance so they can arrange the most comfortable table.
Maso Burba is open Thursday through Sunday for dinner, and Saturday and Sunday also for lunch. It is closed on Mondays, Tuesdays, and Wednesdays.
