The story
Il Papavero is a small, 30-seat restaurant in the historic center of Eboli, a town in the province of Salerno. Owner Maurizio Somma transformed an elegant townhouse into a dining room that feels both contemporary and welcoming, with a cool garden for outdoor seating, air conditioning, and accessible parking.
The kitchen is led by chef Fabio Pesticcio, one of the youngest Michelin-starred chefs in Italy. His cooking is rooted in the best ingredients from the Piana del Sele and the Gulf of Salerno, but he is not bound by tradition. “Our cuisine is of the heart and the territory,” the restaurant explains, “inspired by the best of the region to create a new gastronomic mood, respectful of tradition but evolved.”
That approach earned Il Papavero a Michelin star, a recognition of its high-quality cooking that balances local loyalty with creative ambition. Dishes change with the seasons, drawing on fresh, local produce while leaving room for ingredients from beyond Campania. The result is modern Campanian cuisine that feels grounded, not gimmicky.
The dining room is intimate, the service personal. A carefully curated winery complements the menu. For those seeking a genuine expression of this corner of southern Italy, one that respects its roots while daring to evolve, Il Papavero delivers with quiet confidence.
