The story
Da Bibe is one of Florence’s oldest trattorias, and perhaps the only one that can claim continuous family ownership for more than 150 years. The story begins in the early 1800s, when a relative opened an osteria after returning from Napoleon’s Russian campaign. He passed the trade to his children, and it was handed down generation after generation. In the early 1900s, the great-grandfather transformed the osteria into the Trattoria del Ponte all’Asse – also selling salt and tobacco – and it became one of the most famous typical trattorias in Florence. That same spirit of tradition and passion lives on today.
The trattoria is set in a quiet garden in Galluzzo, just south of Florence’s historic centre. With outdoor seating, a wine cellar, and space for private parties and events, it is a welcoming spot for lunch, dinner, or a special gathering. The garden itself is a highlight – the restaurant invites guests to think of it as “il nostro giardino... il tuo evento”.
The cooking is firmly rooted in Tuscan tradition. Antipasti include salumi di cinta senese with confit onions, crostini toscani, and lardo di Colonnata crostoni. Fresh handmade pasta appears in dishes such as pici cacio e pepe, pappardelle with wild boar ragù, and ravioli with ricotta and spinach. Secondi range from bistecca alla fiorentina cooked over coals to peposo alla fornacina with cannellini beans, roast guinea fowl with savoy cabbage and porcini, and duck breast with honey and radicchio. Desserts include tiramisù, semifreddo al croccante, and cantucci with vin santo. The wine list is extensive, with selections by the glass or bottle, plus a long list of grappas, whiskies, and digestifs.
Da Bibe’s dedication to authentic Tuscan cuisine and warm hospitality has earned it a place in the Michelin Guide’s Recommended selection – a fitting nod to a restaurant that has been serving good taste and tradition for over a century.
