The story
Da Burde is a Florence trattoria with a split personality—and that’s its charm. On one side, it’s a straightforward Tuscan eatery where Paolo Gori turns out hearty, traditional dishes. On the other, it’s a wine bar with a seriously curated list, overseen by sommelier Andrea Gori. This dual identity has earned the restaurant a Michelin Bib Gourmand, recognition for good quality, good value cooking.
Brothers Paolo and Andrea run the show. Paolo is the chef, rooted in the cucina toscana that defines the menu. Andrea, a sommelier with a penchant for technology (he calls himself a “sommelier potenziato con AI”), builds a wine list that leans heavily on natural, biodynamic, and artisanal producers. Together, they’ve created a place that feels like a neighborhood hangout for wine lovers.
The menu changes with the seasons and the calendar. A Carnevale dinner might feature polpette di carnevale, minestra di pane, pappardelle al cinghiale, and lucio in umido, finished with biscotti di Prato fritti. Other evenings bring fegatello, zuppa di castagne, penne strascicate, or stracotto. Paolo’s cooking is direct, unfussy, and deeply satisfying—the kind of food that makes you want to linger over a second bottle.
Da Burde is as much a wine destination as it is a restaurant. Andrea Gori hosts regular degustazioni (tastings) and events, often featuring small growers from Tuscany and beyond. The wine list is a living document, with bottles from Champagne to Chianti Classico, many from producers the Goris know personally. The restaurant also offers cooking classes, delivery through “Burdelivery,” and even a line of preserved foods called “La cucina di Burde in vaso.”
The Michelin Bib Gourmand is awarded for food that delivers quality at a reasonable price. Da Burde fits the bill perfectly: the cooking is accomplished but never precious, the wine list is exceptional without being intimidating, and the atmosphere is warm and unpretentious. It’s the kind of place you return to again and again, whether for a quick lunch or a long dinner with friends.
