The Menus

Two tasting menus anchor the experience. Espressione — gestures, forms and colours — moves through dishes like tagliatelle mantecate with rocket butter and oysters finished with pork rind jus, and roasted pigeon breast with spelt and salted peanut cream, closing with an apple aspic paired with porcini mushroom ice cream and candied grapefruit. Madre Terra follows the rhythms of nature, offering dishes such as spaghettini served tepid with a "Tuscan furikake" and broccoli ice cream, and a millefoglie of cavolo nero with aglione and saffron. Both menus are priced at €390 per person, wines excluded, and are served to the whole table.

À la carte, the Tuscan and Italian cooking tradition comes through in dishes like slow-roasted Mora Romagnola suckling pig, guinea fowl baked whole in a salt crust with herbs and spices for two, and a vanilla soufflé with panforte ice cream and vin santo sauce.
