The story
On the Tuscan coast in Follonica, Oasi is the domain of Chef Mirko Martinelli. His philosophy is clear: excellence lies in simplicity. “I love imagination and creating, having fun with food,” he says, but the foundation is always tradition. The flavours tell their own story and are the true protagonists of every dish.
Chef Martinelli’s love for fish is instinctive, shaped by the coastal environment where he grew up. He selects only the highest quality products, respecting their natural characteristics with minimal cooking techniques. The result is a cuisine that is both Mediterranean and deeply personal, rooted in the sea.
The restaurant offers several tasting paths, each designed to showcase the day’s best catch. The “Crudino” is a variation of raw fish, while the “Grand Entree” presents five antipasti. For a broader experience, the “Classichino” combines three antipasti, a first course, and dessert. Every plate is a study in letting the ingredient speak.
This dedication to quality and clarity has earned Oasi a place in the Michelin guide, recognised as a Recommended restaurant for 2026. It is a quiet affirmation of a kitchen that values substance over spectacle.
