The story
In the narrow streets of Giulianova’s historic center, Aprudia offers an intimate and sustainable dining experience. The restaurant’s philosophy is rooted in seasonality and respect for ingredients, with a menu that changes to reflect what is freshest.
The kitchen presents two tasting paths: the “Piccolo Cuciniere” with five courses at €60, and the larger “Cuciniere” with seven courses at €80. Both menus are intended for the whole table, encouraging a shared, convivial experience. Dishes such as beef and oyster, or tagliatella in chicken and hay broth with gizzards, sage, and vermouth, showcase a clear, modern approach to Italian flavours. Other highlights include red onion with kefir cream, peanut butter, and chives, as well as wood pigeon with apricot, agretti, and algae. A small supplement of €5 covers oil, bread, and an extra “coccola” (a little treat).
The restaurant’s recognition by the Michelin guide underscores its commitment to quality and refined technique. Aprudia’s modern cuisine is best enjoyed in the calm of the evening, when the historic setting and focused cooking come together in a genuinely personal dining experience.
