The family behind the restaurant dreamed for years of opening a small luxury boutique hotel, and that dream has come true. The result is a space where the focus is on complete satisfaction with an experience, not on formality.
The kitchen at Dam crafts modern cuisine with a strong Mediterranean influence, drawing on the rich culinary traditions of the region. The menu is presented as a tasting experience, with two options: the DAM menu and the DAM menu XL. Both begin with a DAM welcome and progress through a series of carefully composed dishes.
The DAM menu features highlights such as a Soča trout mosaic with beet and horseradish gel, Tolmin cottage cheese, and trout roe; potato gnocchi with asparagus and shrimp foam; and a cuttlefish, egg, and truffle dish with prosciutto from the Vipava Valley. The journey continues with rice infused with the taste of the sea and the scent of oysters, and octopus with lemon puree. The DAM menu XL adds a sashimi of Piran sea bass and Adriatic shrimp steamed with Mediterranean herbs.
