The story
The philosophy is rooted in the territory. This former fishing station and landing point now welcomes a handful of guests in a dining room centered around a monumental fireplace. The atmosphere is one of quiet focus—soft lighting, jazz, and a passionate wine list curated by sommelier Luca Anselmi.
The kitchen, led by the Bison family, draws on the experience passed down from their parents, who still accompany them in this venture. The cooking is a study in precision: "cotture al millimetro" (cooking to the millimeter) yields full, round, balanced flavors. There are no bizarre pairings, no forced surprises. Instead, the menu—exclusively seafood—changes daily based on what the market provides. "The sea and nature are capricious," the restaurant notes; if your visit is weeks away, there is no point in asking what will be caught.
The cuisine is described as a narrative of authentic contemporaneity. Simple but decisive dishes, where each flavor carries its own weight. The restaurant emphasizes that every plate is the fruit of experience and of the people encountered along the way—friends, enemies, artists, poets, chefs, writers, all leave a trace in the food.
This commitment to ingredient-driven, technically precise cooking earned La Zanzara a Michelin star in 2026, recognizing high-quality cooking that respects the rhythms of the delta. It is classic seafood cuisine at its most sincere: no fluff, just the taste of this singular place between land and sea.
