Three Generations of History

Villa Maiella began in the late 1960s, when grandma Ginetta and grandfather Arcangelo opened a small restaurant serving “trippa, snails and sagne (Abruzzo’s typical homemade pasta) with beans.” Today, the Tinari family continues that tradition, now with a Michelin star that recognizes the high quality of their cooking. The restaurant sits on the ridges of Guardiagrele, in the heart of the Maiella National Park, and the connection to the land remains the foundation of everything they do.

A Taste of Abruzzo

Chef Arcangelo Tinari leads the kitchen, crafting menus that showcase the region’s ingredients. The “Territory Menu” (€100) includes handmade chitarra pasta with lamb sauce and smoked ricotta with juniper, while the signature menu (€120) features potato “chitarra” with canestrato fondue and handmade ravioli with saffron from Pizzoferrato, burrata, and lentils of Caprafico. A smaller menu (€80) is available on weekdays, designed to welcome younger guests. Each dish reflects a deep respect for local producers and the changing seasons.

The Farm and the Table

Beyond the restaurant, the Tinari family runs a small farm where they grow vegetables, noble flours, and raise certified black pigs. The pigs are fed with their own crops, closing the loop between field and plate. This commitment to “living the land” extends to the wine list, which features a careful selection of Italian and international labels, and to the breakfast pastries made daily by Angela and Antonella. For a complete experience, the restaurant also offers a hotel, a cocktail bar, and specialty coffee extracted by siphon.
