“Fish, like people, should be looked in the eyes.” This guiding philosophy sets the tone at Da Guido, a seafood restaurant on via Roma Sinistra in Jesolo. For more than three decades, the kitchen has operated with a single master: the fish itself. Arriving each morning from the nearby port of Caorle and the Croatian coast, the catch dictates the rhythm of the day, the menu, and the wine pairings. The team sees themselves as its servants.
The story begins in 1967 in Mainz, Germany, where founders Guido and Giovanna met while working in a gelato workshop. Five years later, they returned to Italy to help Guido’s parents at the Osteria di Brische in Meduna di Livenza. There, Guido discovered the cornerstones of his cooking: sincerity, found in the simple dishes of the peasant tradition, and rigor, in selecting ingredients from the gardens, courtyards, and vineyards of the Treviso countryside. This foundation still shapes every plate at Da Guido.
The kitchen follows one rule: seasonality. Ingredients are enhanced without embellishment. The menu changes with the catch and the calendar, offering classic yet contemporary seafood dishes.
