Le Cedrare – A Dining Room Among the Vines

In the small town of Illasi, just east of Verona, Le Cedrare occupies a setting that is both grand and intimate. The restaurant is housed within the greenhouses of Villa Perez-Pompei Sagramoso, an 18th-century villa surrounded by Italian gardens, hedges, fountains, and a park. A castle rises on the horizon. Inside the glass-walled rooms, fine dining and wine converge in what the restaurant describes as a magical atmosphere.

Chef Marcantonio Sagramoso: A World of Technique, Rooted in Verona

The kitchen is led by Count Marcantonio Sagramoso, who runs the restaurant with his wife Eleonora. His path to the stove was a long one—a decade of apprenticeship in some of Italy's most prestigious kitchens and abroad. He trained with Chef Fabio Tacchella at Antica Pesa in Verona, with Gualtiero Marchesi at L'Albereta in Erbusco, with Sergio Mei at the Four Seasons in Milan, and at the Cip's Club of the Hotel Cipriani in Venice. He also cooked at the K Club in the Caribbean. He was a member of the Italian National Chefs Team (NIC), competing in World Cups and Olympics.

Despite his international experience, Chef Sagramoso returned to the family villa in Illasi to open Le Cedrare. His cooking philosophy is personal and unconstrained. He describes his cuisine as "of the world, but with local grafts," blending a refined, international style with the traditions of the Veneto and Verona. He uses only seasonal ingredients of the highest quality, and his plates are the result of meticulous research and attention to detail. The chef himself bakes the bread fresh daily, and the olive oil served at the table is from the estate's own production.

A Cuisine Without Borders

Sagramoso's menu is a reflection of his belief that cooking, like music, should have no limits. He reinterprets traditional Veronese dishes with modern techniques and creates entirely new compositions born from his travels. The wine list is extensive, with over 250 labels to pair with the tasting menus and à la carte selections. This approach, which marries classic Venetian cuisine with a contemporary, global perspective, has earned Le Cedrare a place in the Michelin guide.
