In the quiet countryside of Dolcedo, just outside Imperia, Equilibrio stakes its claim with a provocative tagline: Tra misura e vertigine. La follia diventa linguaggio. (Between measure and vertigo. Madness becomes language.) This is the philosophy that animates the kitchen—a deliberate dance between control and the unexpected, earning it a Michelin star for high-quality cooking.
The restaurant offers two distinct tasting paths. The first, named Follia (Madness), is described as an experience outside the rules, a free-form journey priced at €130 per person. The second, Equilibrio, is where every element finds its place: nothing is left to chance. This menu, at €100 per person, includes dishes that weave together local and global inspirations, such as a PIC NIC of prawn, almond, cherries, and samphire with koji, or a Storia di Equilibri featuring rabbit handkerchief pasta, broad beans, blue crab bisque, and lovage. A supplement of €15 adds a saddle of venison with black sesame and pak-choi.
The kitchen’s commitment to territory is clear, with a dedicated focus on grains—I Nostri Grani—as a living matter that tells a story of identity and the land. This contemporary take on Ligurian cuisine is further supported by a wine list described as a journey in itself, a living selection built to accompany the food, the ingredients, and the moment.
Equilibrio is open for dinner Tuesday through Sunday, with Sunday lunch also available. The atmosphere is warm yet precise, allowing guests to feel both the measure and the vertigo. Pets are welcome, and the restaurant provides private parking.
