The story
For more than one hundred years, the Cacciatori family has been interpreting the flavours of Liguria with art and passion. The kitchen works from a blank canvas each day, drawing on a deep respect for the region’s produce. An organic garden supplies vegetables and fruit harvested at peak ripeness, while the family’s own olive oil — made from handpicked Taggiasca olives, pressed cold as tradition demands — adds a distinctive Ligurian note to every dish.
The menu changes with the seasons, offering several tasting paths. The Menu 1905 tells the story of 120 years of evolution across four courses. The Menu 1996 is a four-course vegetable tasting, and the Menu 1946 lets guests compose their own meal from the à la carte list. Standout options include the spaghetto with anchovy colatura, smoked butter and black tea; a panzanella with ricotta salata and roasted pepper; and the Carnaroli risotto with sea urchin, mandarin, horseradish and fennel pollen.
