The story
In the heart of Traversella, the main square of this Valchiusella town, Albergo Ristorante Le Miniere has been a gathering place for over sixty years. The Arsini family runs both the hotel and the restaurant, and their experience shows in the care given to every detail – from the dining rooms that look out onto the surrounding nature to the plates that arrive at the table.
The kitchen focuses on Piedmontese cuisine, rooted in the traditions of the region. Seasonal menus change regularly, but the style is clear: dishes that respect local ingredients and the landscape. A June menu, for example, featured a finissima di fassone piemontese with bagna cauda and wild garlic flowers, followed by a filettino di trota di Traversella on a bed of wild herbs with a fresh Tometta cheese emulsion. Another evening brought polenta concia of red corn with ten herbs, paired with capriolo in civet braised in Carema nebbiolo. Wild herbs, cheeses from the valley, and the local trout appear often, as do the crusciot (a local wild hop) and barbabuc (a type of wild chicory).
The restaurant’s wine list is selected from the Piedmont region, and the atmosphere is welcoming – a place for a leisurely lunch or a celebratory dinner. The Michelin guide awarded Le Miniere a Bib Gourmand in 2026, a recognition that highlights good quality cooking at a reasonable price. The same year, the restaurant was also listed in Osterie d’Italia and Guida Golosa, further confirming its standing among the region’s best trattorias.
