The story

Starters such as vitello rosa – slow-cooked veal with tuna sauce – and fassona tartare with mayonnaise and radish set a precise tone. Among the primi, tagliatelle with mountain pesto and larch buds, and gnocchi with Roccaverano toma and bay leaf extract speak to the territory. Main courses include braised veal cheek with glazed fennel and roast guinea fowl with spring salad. Desserts, like a Paris-Brest with almond cream and apricot jam, close the meal on a refined note.
