On the island of Vulcano, part of the Aeolian archipelago off the coast of Sicily, I Tenerumi redefines fine dining. Located within the Therasia Resort Sea & Spa, this restaurant describes itself as a “ristorante vegetale” — a vegetable restaurant — and has earned two Michelin stars for its audacious, original approach.
At the heart of I Tenerumi is chef Davide Guidara. His cooking is guided by a “Manifesto of New Vegetable Cuisine.” The philosophy is built on two pillars: the sustainability of raw ingredients, skillfully grown in the restaurant’s own garden, and a deep respect for the environment across the entire supply chain.
Guidara’s tasting menu is entirely plant-based. The foundation of each creation is meticulous research, resulting in dishes where audacity and originality shine.
