The story
Tucked into a wing of the four-star Hotel Sporting Family Hospitality, Al Peršéf is an intimate space of just seven tables and twenty covers. Chef Attilio Galli and his team work with sincerity and precision, drawing equally from the alpine surroundings and from Eastern culinary traditions.
Galli describes his kitchen as “a taste laboratory,” always open to experimentation yet firmly rooted in the mountains. Here, the finest local ingredients meet techniques and flavour profiles from Asia, creating unexpected pairings—pesteda locale finds its match with umeboshi. The menu unfolds as three degustation paths, each built on a careful balance of flavours and textures. It is, in the chef’s words, “a journey not only through the territory but through memories: a walk, a scent, a family dinner.”
Al Peršéf’s original, modern cuisine earned it a place in the prestigious Michelin Guide 2026 and the 2025 Le Guide de L’Espresso selection. The atmosphere is warm and calm—a space where time slows and you can let the tasting menu tell its own story. As the restaurant puts it: “Take your seat and let time stop.”
