At Kosmo Taste the Mountain in Livigno, the kitchen operates on a simple but radical principle: let the land decide what’s for dinner. Tucked into the Mottolino Fun Mountain area, this Alpine contemporary restaurant flips the usual chef–supplier relationship. Instead of ordering specific ingredients, the team first sees what local mountain farmers and herders are producing, then builds the menu around the best seasonal offerings. The result is a cuisine that feels both rooted and inventive—a natural fit for its Michelin Recommended status.
The philosophy here is ethical and sustainable, with no room for shortcuts. Every ingredient is used to its fullest: fish skins become crispy garnishes, bones and trimmings become concentrated broths, fruit cores are ground into powders for sauces and cocktails. The concept of “scrap” disappears. Because the high-altitude climate yields only a few ingredients, the kitchen relies on natural preservation techniques like fermentation to see them through the long winters. Even essentials like olive oil are left out; the cooking adapts to what the mountain provides.
Dining at Kosmo means experiencing Livigno’s landscape on a plate. The tasting menus change with the seasons, highlighting fresh mountain produce and naturally raised livestock.
