The story
Since 2002, La Filanda has been a destination for those who want to truly understand Tuscan cuisine, not just taste it. Located in Manciano, in the heart of the Maremma, this is a place where the region’s rustic, flavorful cooking is taught and shared with warmth. The approach is hands-on: you work, you taste, and you learn the old recipes of the Maremman kitchen directly from Chef Barbara Cannarsa.
The experience is built around the “Taste of Tradition” cooking class. Each morning, from 10:30 AM to 2:30 PM, Chef Barbara leads a four-hour lesson that begins with a brief history of Tuscan and Italian cuisine before diving into the practical craft of making a real Tuscan meal. The class is designed for everyone—from families to corporate teams—and the reward comes at the end, when you sit down to enjoy the lunch or dinner you have just prepared together.
This is modern Tuscan cuisine at its most authentic, rooted in the landscape of southern Tuscany. The recognition from the Michelin guide, with a Recommended award for 2026, speaks to the quality of the cooking and the sincerity of the experience. At La Filanda, the focus is on sharing the secrets of the region’s culinary heritage in a setting that feels both professional and welcoming.
