The story
On the Tuscan coast of Marina di Grosseto, Gabbiano 3.0 opened in March 2018 with a clear vision: to offer the best of the local territory and beyond. The restaurant’s name recalls the seagull (gabbiano) that moves between sky and sea, a fitting symbol for a kitchen that draws equally from the Mediterranean and the inland Maremma.
The chef, whose name is not given in the restaurant’s own materials, describes his cuisine as a marriage of the sea in front and the rustic Maremma behind. “An intersection with the flavors of the garden,” he says. The style is Mediterranean, but he does not shy away from French techniques when a dish calls for richer accompaniments. Aromatic herbs and delicate flavors define the cooking, making it both refined and rooted in the landscape.
A crucial element is the restaurant’s own garden (orto), which the chef calls “the cradle of flavors, aromas, and scents” that translate into every dish.
