A New Chapter in the Itria Valley

Bros’ is not a restaurant that follows conventions. Since opening in 2016 in Lecce, Floriano Pellegrino and Isabella Potì have built a project that deliberately breaks the mold of classic dining. Their approach earned the first Michelin star in Salento within two years, and now – after relocating to Martina Franca in the heart of the Itria Valley – the duo continues to refine their vision. The move marks a reinvention: “BROS’ cambia pelle,” as they describe it, bringing a more immersive experience where time, space, and taste converge.

A Radical, Instinctive Experience

For Pellegrino and Potì, who are partners in life and in the kitchen, luxury was never about traditional trappings. “We wanted a radical, instinctive experience, truly outside the box,” says Floriano. Their cuisine pushes excellence relentlessly, without compromise. Isabella adds, “If you push excellence, you inevitably reach luxury, but without turning it into a cage.” That philosophy translates into a contemporary fine-dining style that is both bold and precise – a cuisine that redefines what fine dining can be, without the stiffness often associated with it.
