Bistrot: A Michelin-Starred Family Affair on the Versilia Coast

On Viale Franceschi in Forte dei Marmi, Bistrot is the expression of the Vaiani family’s deep-rooted connection to the Tuscan land. The restaurant’s philosophy, as they describe it, is “a journey between authentic flavors and experimentation”—a balance that has earned it a Michelin star for high-quality cooking. The star is not an endpoint but a reflection of a kitchen that draws directly from the family’s own farm, La Fattoria Vaiani, where the quality of produce dictates the rhythm of the menu.

The cooking here is Italian Contemporary with a strong focus on seafood, reflecting the restaurant’s position on the Tuscan coast. The menu is divided into clear narratives: a business-friendly “Il Pranzo del Bistrot” offers classics like carpaccio of branzino, bavette sul pesce, and a fritto misto of seafood and vegetables. But the heart of the experience lies in the tasting menus, each named with a suffix that hints at its character.

“Natural_mente” is a vegetable-forward path, featuring dishes like the farm’s own egg with tomato chutney and elderflower vinegar, or ravioli filled with black-eyed peas, pecorino, and saffron. “Classica_mente” celebrates the sea with Bistrot’s raw seafood platter, chitarra spaghetti with clams, and a turbot in Vernaccia wine. “Profonda_mente” offers six or eight courses that dive deeper into ingredient and concept. There is also “Enologica_mente”, a wine-pairing journey through Italian and international bottles.

The team, led by the Vaiani family, is described as “one big family,” and that sense of shared purpose comes through in dishes like “Andrea&Andrea”—a dessert dedicated to the farmer and the chef, combining mascarpone cream, berries, aromatic herbs, and a cacao “soil.” It is a sweet metaphor for the restaurant’s identity: rooted in the farm, elevated by technique.

Dining at Bistrot is a daily affair, open for lunch and dinner (closed Tuesdays), with outdoor seating in good weather and a wine list that rewards exploration. The setting is understated, letting the food and the family’s story take centre stage.
