At Castel Fragsburg, high above Merano, the Gourmet Restaurant Prezioso holds a Michelin star for its refined Alpine cuisine. Chef Egon Heiss, a native of the Sarntal valley, brings a deep-rooted philosophy to the kitchen: “Südtirol Heiss inszeniert” – South Tyrol, hotly staged. His cooking is grounded in recipes passed down through generations, reimagined with modern precision and a focus on health.
The foundation of every dish is regional and vital. Heiss works with fresh produce from the hotel’s own Fragsburg Soul Garden, alongside ingredients from organic farms and heritage varieties from South Tyrolean soil. The result is a degustation menu that celebrates purity, colour, and aroma – a symphony of flavours that feels both wholesome and luxurious.
