At DanielCanzian in Milan, chef Daniel Canzian brings a clear philosophy to the table: cuisine as art, expressed through synthesis and simplicity. His “Manifesto of Contemporary Italian Cuisine” outlines seven pillars rooted in tradition, quality, and a conscious craft. The kitchen draws on the flavors of the lagoon and the mountains, offering a Venetian soul reimagined for today.
The restaurant’s Michelin Recommended status reflects this precise vision. Menus change with the seasons, guided by the chef’s Monday-morning visits to the San Marco Market. The à la carte selection embodies simplicity and purity of taste, while the “Identity” menu traces Daniel Canzian’s most celebrated dishes from 2013 onward, evolving naturally throughout the year. Signature risottos and beloved desserts remain cornerstones.
Guests can choose from several formats. The “Haute Venetian Cuisine” tasting menu celebrates local ingredients and recipes rooted in memory, reinterpreted with contemporary creativity. The “Dedicated to You” experience offers a six-course chef’s table menu, created around the diner’s preferences and served at the counter alongside the chef and his brigade. A lunch menu, “Bon,” features a changing selection of signature dishes in a streamlined format. On Fridays, a dedicated menu celebrates baccalà.
The restaurant also offers seasonal menus for private events and catering, both in the dining room and off-site. A boutique selling iconic products, gastronomy, and pantry staples, along with cooking courses for enthusiasts and professionals, extends the experience beyond the table.
