The story
On via Cesare da Sesto, just steps from Milan’s historic center, Dry Aged brings a fresh, metropolitan energy to the city’s dining scene. This contemporary grill restaurant, recognized by the Michelin Guide in 2025, is the vision of two friends, Matteo Ferrario and Stefano Carenzi, who together have crafted a place where tradition and modernity meet.
The space is divided into three distinct environments: a main dining room with an open kitchen, a New York-style bar with a social table, and a private room that doubles as a wine cellar. The design is bold and urban, with exposed artworks and a carefully curated atmosphere that feels both dynamic and refined.
Matteo Ferrario, the executive chef, brings experience from several Michelin-starred kitchens, including Villa Feltrinelli and Ettore Bocchia. His cooking philosophy centers on concentration of flavor, respect for raw ingredients, and a strong sense of territoriality. The result is a menu that changes with the seasons, built around grilled meats and contemporary Italian dishes that let the quality of the product speak for itself. Among his signature creations is a risotto cooked in an infusion of linden, blueberries, and mushrooms—a dish he first presented at Identità Golose.
Stefano Carenzi, restaurant manager and sommelier, oversees the dining room and a wine list of around one hundred labels, with a strong focus on natural and biodynamic Italian wines. His background includes stints at Joia, Hotel Cipriani in Venice, and Berton in Milan, where he helped the restaurant earn its first Michelin star.
The atmosphere at Dry Aged is lively but never rushed. The open kitchen invites you to watch the chefs at work, while the bar area offers a more casual spot for a drink or a lighter meal.
