Horto Milan: Michelin-Starred Ethical Cuisine in the Heart of Milan

Horto sits in the heart of Milan, “immerso nel verde, a pochi passi dal cielo” – a green pause above the city’s rush. Here, time slows. The restaurant’s philosophy, Ora Etica, is built on sustainability, innovation, and a deep respect for local production. A network of farmers, breeders, and foragers within an hour of Milan supplies the kitchen, ensuring every ingredient is seasonal, ethical, and traceable.

The Philosophy of Ora Etica

This is not a culinary journey in the abstract sense. It is a concrete commitment: to minimise waste, celebrate the natural cycle of raw materials, and support producers who work in harmony with the environment. The restaurant’s water is filtered locally through BWT technology, and for every litre sold, a donation supports clean-water projects in Tanzania. Even the breakfast and aperitivo menus reflect this ethos, with ingredients drawn from nearby gardens.

The Team Behind the Star

Horto’s culinary direction is led by Norbert Niederkofler, a pioneer of sustainable cuisine. He has entrusted the kitchen to Resident Chef Alessandro Pinton, whose experience alongside Niederkofler at Atelier Moessmer in Brunico shaped his sensitivity to zero-waste cooking. Supporting him is Sous Chef Manuele Garello, formerly of St. Hubertus, and Pastry Chef Piera Romano, who brings international expertise to the dessert program. Together, they transform local produce into dishes that are authentic, innovative, and 100% Zero Waste.

The Menu

Horto’s tasting menus are the purest expression of its philosophy. The seven-course L’Ora Etica degustation (€185) moves from rainbow trout with broccoli and wild artemisia to veal tongue in red wine, homemade pasta stuffed with wild duck, and a course from the Josper grill. A vegetarian counterpart, Vegetali Mon Amour, showcases seasonal vegetables, grains, and eggs from Gea gardens. Both are available in shorter formats, and wine pairings are offered.

Horto earned its first Michelin star in 2026, a recognition of its high-quality cooking – but the real achievement is the quiet confidence of a kitchen that lets the land speak for itself.
