The story
At Pellico 3, modern cuisine is a study in balance and seasonality. Executive Chef Guido Paternollo, a Milanese engineer turned chef, brings an international sensibility to his cooking after training with Enrico Bartolini, Alain Ducasse, and Yannick Alleno. His menu follows the natural rhythm of ingredients, drawing inspiration from across the Mediterranean basin. The result is food that is both sophisticated and welcoming—plates that awaken memory while surprising the senses.
The dining room, designed by architect Flaviano Capriotti, is a luminous space where a palette of yellows, browns, and greens echoes the seasonal ingredients on the plate. Chef Paternollo leads a kitchen team that includes Chef de Cuisine Joshua Acquaviva and Pastry Chef Alessio Gallelli, while Restaurant Manager Pietro Blanco oversees the service. An exceptional wine list, curated by sommelier Lorenzo Alberti, features a strong selection of Champagne, Barolo, and Brunello.
Pellico 3’s approach has earned it a place in the Michelin guide, recognized for its refined, elegant cooking that unites taste, passion, and technique. The restaurant was also named “Sorpresa dell’anno” (Surprise of the Year) by the Identità Golose guide in 2023, marking Chef Paternollo as one of Italy’s most promising talents. Each dish is the fruit of careful research into raw materials and tradition, reimagined with a modern, personal touch.
