Sadler, a Michelin-starred restaurant in Milan, is the expression of chef Claudio Sadler’s philosophy: “Cucina moderna in evoluzione” – modern cuisine in evolution. Located within Casa Baglioni on Via dell’Annunciata, the dining room offers a setting that balances tradition with a forward-looking spirit. The cuisine draws from Italian roots, with a particular focus on seafood, and occasionally nods to Swiss influences, reflecting the chef’s own background.

The restaurant’s tasting menus are the clearest expression of this approach. One of the most recent, called #Tradizione&Innovazione, was designed to be both a culinary statement and a social-media-friendly experience. Its five courses include dishes such as carpaccio of lobster with a Niçoise-style dressing and veils of cuttlefish, and a risotto “nero e oro” with calamari, mango and currants. Each dish is marked with the year it was created, some dating back to 1990, showing how Sadler’s cooking has evolved over decades.

A Gourmet Experience and More

For those seeking a deeper immersion, the restaurant has offered a “Gourmet Experience” – a ten-course menu paired with wines selected by the sommelier. Past menus have included items like oyster with salmon and anchovy, sturgeon in carpione with almond sauce, and a playful “Piña Colada al cucchiaio”. This kind of elaborate tasting menu is a hallmark of the fine-dining Italian cuisine Sadler champions.

The kitchen also runs occasional cooking classes with the chef himself, where guests learn to prepare four dishes and then enjoy the meal with wine pairings. And the restaurant frequently hosts themed evenings, such as a collaboration with actor Andy Luotto inspired by the fictional Swiss chef Fritz Brenner from the Nero Wolfe series – a clear nod to the Swiss cuisine tag.

Sadler is not just about dinner. A lunch service runs daily, offering a more accessible menu that still balances tradition and innovation. On Sundays, a special menu features dishes like amberjack tartare with orange ceviche and marinated radishes, or spaghetti alla Nerano. And for a different kind of experience, the Casa Baglioni Rooftop by Sadler serves aperitifs with a 360-degree view over Milan’s iconic landmarks.
