Helmed by acclaimed chef Antonio Guida, the restaurant holds two Michelin stars and a Wine Spectator Best of Award of Excellence, a recognition that speaks to the calibre of both kitchen and cellar.
Chef Guida’s menu presents an inventive and contemporary approach to Italian cuisine, fusing traditional techniques with an innovative edge. The result is food that feels rooted in the Italian tradition yet decidedly modern in expression. For more than twenty years, Guida has shared the kitchen with Executive Sous-Chef Federico Dell’Omarino, his right-hand man. Pastry Chef Marco Pinna adds a touch of sweet elegance to each menu.
The setting is as considered as the cooking. Seta is nestled within the hotel’s second courtyard, where striking glass windows merge the inner and outer spaces. During warmer seasons, guests can dine outside; inside, a visible kitchen turns the meal into culinary theatre, with the team at work in full view.
Beyond the regular menu, Seta offers a three-course lunch delivered in one hour, a Chef’s Table experience, and a special Menu Fornasetti. There is also "A Casa di Antonio" – a monthly charity lunch where Chef Guida opens his private home for up to twelve guests, serving dishes from Seta’s repertoire. All proceeds go to 'I Fiori Rari', the philanthropic fund for rare disease research he established.
