The story
Verso Capitaneo sits on Milan’s Piazza del Duomo, a restaurant where the kitchen and the dining room are in constant dialogue. The space is intimate, with three chef’s tables and three traditional tables, encouraging a close, continuous relationship between guest and cook. The atmosphere is refined but unhurried, the kind of place where the craft of cooking and the pleasure of eating are given equal weight.
Chefs Remo and Mario build their Mediterranean cuisine around the freshest seasonal ingredients, transformed with techniques that enhance character and flavour without excess. The menu changes with the market, but recent dishes give a clear sense of their approach: wild quail with oyster and Senise pepper, langoustine with rabbit and Purosale caviar, veal sweetbread with sea urchins and coffee béarnaise. Pastas and rice dishes are equally precise – almond ravioli with chicken sauce and sea figs, king crab spaghettoni with finger lime, chamomile risotto with charcoal-grilled snails and mustard. Main courses include blue lobster with wagyu and tonka bean, pigeon “Giusti” with Polignano carrots, and lamb from the Lucanian Dolomites with morels and clams.
Guests can choose à la carte or a tasting journey of six or eight courses, served at 220 euros per person. An optional addition of two selected courses brings the menu to 270 euros. Wine pairings, curated by Marco Matta and Valeria Biancini, range from 140 to 160 euros and draw from a deep cellar of Champagnes, Burgundies, and international labels.
