The story
On Via Farini in Modena, Hosteria Giusti embodies a philosophy rooted in genuine hospitality: "the food is a moment of relaxation, and it is our job to convey this pleasure." This approach, taught by the generations before them, is put into practice every day. The restaurant opened in 1989, born from the renovation of the old slaughterhouse attached to the family's salumeria, the very place where pork and goose meats were once processed. This Emilian cuisine destination has earned a Michelin Recommended award, a recognition that feels natural for a place so dedicated to tradition and quality.
The kitchen takes pride in a daily ritual: "impastare e tirare a mano tutta la pasta all'uovo" — kneading and rolling all the egg pasta by hand. The menu changes seasonally, offering both à la carte options and tasting menus, which must be selected at the time of booking. The same exacting standards applied to the pasta are used to source ingredients. The family selects small artisans who can guarantee the traditions of the product and the high quality of raw materials, seeking out ancient recipes and lost flavors. "We believe in the strength that the past can give to the present and the future," they explain.
The space that once aged salumi now serves a different purpose. In 1989, the Bottiglieria was created, a room originally used for curing meats that now houses the restaurant's most important bottles, both Italian and international. With an interesting wine list and a setting that respects its past, Hosteria Giusti offers a dining experience that is both deeply local and quietly refined.
