Tradition in Evolution

Osteria Francescana describes itself as "a laboratory of ideas" — and that phrase captures something essential about what Massimo Bottura has built on Via Stella in the heart of medieval Modena. The restaurant has held the top position in The World's 50 Best Restaurants twice, in 2016 and 2018, and has appeared in the top six of that ranking every year since 2010. That kind of sustained recognition is rare, and it reflects a kitchen that has never stopped questioning itself.

Bottura grew up in Modena, and his own origin story is woven into the restaurant's identity. "I grew up under the kitchen table," he writes. "As my grandmother Ancella rolled out the pasta dough, I hid under from my older brothers with flour falling on my feet." At Osteria Francescana, he says, the goal is to look at the world from that same angle — "upside down," with the curiosity of a child.

Miseria e Nobiltà

As the restaurant marks its 30th anniversary, the current menu is built around the theme Miseria e Nobiltà — Misery and Nobility. It's a framework that runs through Italian cooking's deepest history: the idea that Italian cuisine has never drawn its wealth from luxurious ingredients, but from culture, care, and the refinement of recipes passed down through generations. "The nobility of Italian cooking lies not in opulence, but in culture."

The tasting menu (€350) reflects this philosophy in dishes like Onions Dreaming of Caviar, Where is this pasta e fagioli going?, and Jazz Duck: improvisation. The à la carte offers its own set of signatures — among them the Five ages of Parmigiano Reggiano in different textures and temperatures, An eel swimming up the Po River, and the now-iconic Oops! I dropped the lemon tart. Emilia-Romagna's pantry is ever-present: Culatello di Zibello aged 42 months, Modenese tortellini in 36-month Parmigiano Reggiano sauce, Tagliatelle al ragù. These are not nostalgic recreations — they are arguments about what Italian cuisine can become.

Art on the Walls, Ideas in the Kitchen

The dining room at Osteria Francescana is hung with contemporary art, and Bottura is clear that the works are not decoration. "They are windows onto the landscape of ideas that widen horizons and open up possibilities." Art, he says, animates the dialogue between the dining room and the kitchen — it leaves clues to the creative process.

Beyond the restaurant, Bottura and his wife Lara Gilmore founded Food for Soul in 2016, a cultural project that rescues surplus food and fights social isolation through a network of Refettori across nine countries. The same moral seriousness that drives that project is present in every plate at Osteria Francescana.

The opening of Osteria Francescana's 2025 menu reads: "Only after having studied, explored, and respected tradition do you have the right to set it aside, but always with the awareness that we owe it at least for having helped clarify our ideas. Naturally, if you remain anchored to the past, life that moves forward becomes life that stands still, but if you use tradition as a springboard, it is obvious that you will jump much higher." Taken from a reflection by Eduardo de Filippo. Miseria e Nobiltà is the theme for this year on Via Stella. Each year, the Modenese chef, together with his team, unveils a new tasting menu that subsequently shifts slightly with the changing seasons. After more than three decades, Francescana remains the restaurant that defines the benchmark for Italian haute cuisine. The menu features inspired dishes such as Bread and Water and the Genovese, which are miniature masterpieces and alone can make the trip worthwhile. In the dining room, Beppe Palmieri will ensure you feel thoroughly pampered.
