Almost everything comes from nearby waters. The team selects 99% of their ingredients each morning from the fish markets of Grado, Marano, and Trieste. Only a few items, such as Blufinn bluefin tuna from Sicily or Sardinia and Gillardeaux oysters, are brought in from farther afield because local waters cannot supply that level of excellence. This commitment to freshness is the backbone of their cooking.
