A Restaurant with Roots

Borgo Spoltino sits among olive trees in the rolling hills of Mosciano Sant'Angelo, between the Gran Sasso and the Adriatic coast. The restaurant is housed in a restored casolare, with a small church and a centuries-old olive tree that has stood for 350 years – a living symbol of the connection to the land that defines this place.

The Chef’s Philosophy

Chef Gabriele Marrangoni founded the restaurant in 2003 with a clear purpose: to be an ambassador of Abruzzese cuisine. A musician, researcher, and innovator, he understood early that a chef’s role extends beyond the kitchen – to support local producers, promote biodiversity, and preserve tradition. He collaborated with the University of Teramo, taught in Brazil, and was inducted into the Order of the Knights of the Maccheroni alla Chitarra in 2015. That same year, Borgo Spoltino received its first Slow Food snail, a testament to its commitment to the territory.

The Menu

The menu evolves with the seasons, drawing inspiration from the traditional recipes of the Teramo area. Ingredients come from the restaurant’s own organic garden and from local Slow Food presidia and small farms. Dishes like chitarra pasta with sugo alla teramana, gnocchi made with solina flour and baccalà with crumble of Cantabrian anchovy, and braised beef cheek are prepared with a light, contemporary touch. The kitchen also accommodates gluten-free requests. The Michelin Bib Gourmand recognizes Borgo Spoltino’s dedication to quality and value, offering a genuine taste of Abruzzo in a welcoming setting.
