The story
The phrase “La magia della leggerezza” – the magic of lightness – is not just a slogan at 50 Kalò. It is the guiding principle behind every pizza that emerges from Ciro Salvo’s ovens in Naples. Located on Piazza Sannazaro, this pizzeria has become a reference point for those who believe that great pizza begins with the dough: fermented slowly, handled with care, and baked to a delicate balance of crisp and soft.
Ciro Salvo, a master pizzaiolo with a deep understanding of flour and hydration, has built 50 Kalò around the idea that a pizza should be light enough to eat without heaviness. The result is a crust that is airy, well-charred, and remarkably digestible – a style that has earned the restaurant a Michelin Recommended distinction in 2026.
The setting on Piazza Sannazaro is relaxed and welcoming, with the option of outdoor seating when the Neapolitan weather allows. The interior is modern, air-conditioned, and designed to let the pizza speak for itself. The menu focuses on classic Neapolitan pizzas, with a few creative variations, all built on that signature base.
50 Kalò has since expanded to other locations – including a second spot in Naples at Piazza della Repubblica, as well as outposts in Rome and London – but the original remains the heart of the project. Here, the magic of lightness is tangible in every bite.
