The story
At Salvo in Naples, pizza is a living tradition. Francesco and Salvatore, the latest generation of a three-generation family of pizzaioli, run this Riviera di Chiaia outpost with a clear mission: to safeguard, develop and evolve Neapolitan pizza. Their approach is deeply rooted in the city’s culinary heritage, yet constantly looking forward. The result is a style of pizza that adapts to new kitchen discoveries, changes with the seasons, and is elevated by thoughtful flavour combinations.
The foundation of every pizza at Salvo is the dough. It proofs for more than 24 hours at room temperature, using two specific types of flour to achieve a soft, airy and elastic crumb. The brothers work directly with trusted producers of vegetables, cured meats, cheeses and dairy, building relationships based on mutual respect and a shared commitment to quality. This focus on local excellence is the key to their entire gastronomic offering.
The menu is a study in contrasts. Alongside classics like the Margherita POP, you will find more inventive creations such as the TerraMare, the Montanara, the Oshirase and the Scarpariello. Each pizza is designed to satisfy everyone from curious tourists to seasoned pizza lovers. A carefully selected wine list and an oil list featuring both Campanian and other Italian labels complement the food.
Salvo also offers a "True Neapolitan Masterclass" experience, a late-morning to lunch program where guests can learn to make pizza with an expert pizzaiolo, followed by a guided tasting. The restaurant’s quality and consistency have earned it a Michelin Recommended award, a testament to its place among the best pizzerias in Naples.
