The story
Deste opened in 2018, the realisation of founder Fabio Desteghene’s ambition to marry Sardinia’s finest ingredients with modern culinary techniques. The result is a kitchen that respects deep-rooted flavours while presenting them in a contemporary light. The restaurant’s home is Piazza Rudalza, the very first square built in Porto Rotondo – a setting that feels both historic and exclusive.
The dining room is designed for romance: soft lighting, elegant furnishings, and a backdrop of changing skies and sea views. “The time seems to stand still,” the restaurant’s own words suggest, and the music and sunset colours create a mood that is at once intimate and refined. Outdoor seating is available, making it a natural choice for warm evenings under the stars.
Deste calls itself a fine dining restaurant, and its menu is built around creative dishes inspired by Sardinian tradition. The kitchen uses carefully selected raw materials – a nod to the island’s larder of seafood, cheeses, and herbs – and pairs them with a well-stocked wine list. The style is Italian Contemporary and Modern Cuisine, where technique enhances rather than masks the original taste. The service is attentive and discreet, leaving the food to speak.
The kitchen is led by a team of experienced chefs, including sous chef Marco Calabrò and pastry chef Dexter Jones. Maître Davide Rroshi oversees the dining room, ensuring the experience flows smoothly. The restaurant also offers customised catering and private events, extending its philosophy beyond the main dining room.
In 2026, Deste earned a Michelin Recommended distinction, a testament to its consistency and the strength of its culinary identity. For those seeking a modern interpretation of Sardinian flavours in a truly atmospheric setting, Deste delivers.
