The story
In the heart of Olbia, Essenza Bistrot has quickly become a refuge for those seeking a genuine taste of Sardinia, elevated by a modern sensibility. The restaurant's philosophy is simple: to make guests feel at home while exploring a menu that seeks the "perfect union between the flavours of our Sardinia and innovation." This commitment to quality and creativity earned the restaurant a place in the Michelin Guide, a testament to its refined approach to modern cuisine.
The kitchen is led by Chef Max Villani, who returned to Sardinia after gaining experience in some of Italy's most celebrated restaurants. His cooking is contemporary and precise, with a strong emphasis on fresh, local ingredients. The restaurant collaborates closely with Sardinian producers, from the Spano Group for fish to Macelleria da Alessandro for meat, ensuring that each dish is rooted in the island's rich gastronomic heritage. Fresh pasta, bread, and desserts are all made in-house.
The atmosphere is intimate and warm. Stone-covered walls and a detailed room filled with personal objects create an immediate sense of comfort, while a terrace offers outdoor seating for warmer evenings. The menu is a journey through the island's bounty, with tasting paths dedicated to the land, the sea, and the garden. Standout dishes include the Spaghetto selezione "Verrigni" aglio, olio, peperoncino e granceola (spaghetti with garlic, oil, chilli, and spider crab) and the Tartare di dentice, fragole e liquirizia (snapper tartare with strawberries and licorice). The cellar is equally thoughtful, focusing on local wine excellences alongside international selections.
