The story
“Saur” means flavor. It is a promise kept daily in a small dining room on via Filippo Turati in Barco, Orzinuovi. The restaurant was born from the dream of three young friends: Nicholas and Alessandro in the kitchen, Virginia in the dining room. Together they have built a place where modern cuisine speaks directly to the taste buds.
At Saur, the focus has always been clear. The team studies, cooks and experiments with maturity using what their own land offers. Freshwater fish from local waters, vegetables from the garden, game from the countryside, and cheeses from nearby valleys. This deep connection to the territory allows Saur to work with small producers who share a vision of a sustainable world.
The wine cellar has grown through years of research and continues to evolve, always uncovering new realities.
Saur’s dedication to pure, thoughtful Italian contemporary cuisine earned it a place in the Michelin Guide’s 2026 recommendations. The award reflects a kitchen that never loses sight of its mission: to put flavor first. Every dish is a product of teamwork and passion, rooted in the seasons and the spoils of the surrounding landscape.
Diners can choose from a seven-course tasting menu designed for those who want to know Saur from every angle, or a more compact four-course version built on comforting, familiar tastes. A la carte options are also available. The space is equipped for private parties, and the team offers catering and takeaway services. The restaurant is wheelchair accessible.
Saur is open for dinner Monday, Tuesday, Friday, Saturday, and Sunday, with lunch service on weekends and by reservation. In Orzinuovi, three friends are proving that the best modern cuisine is the one that never forgets its roots.
