In the small town of Osio Sotto, just a short drive from Bergamo, La Braseria brings together the traditions of a butcher shop and the precision of a modern kitchen. Chef Luca Brasi is the force behind this restaurant, which has earned a Michelin recommendation for its clear, confident cooking.

The name hints at the restaurant’s soul: grilling and meat are central, but the kitchen’s ambition goes far beyond the fire. La Braseria describes itself as a “ristorante con macelleria” – a restaurant with an in-house butcher shop – and that connection to prime ingredients is felt in every dish. The cuisine is Mediterranean at its core, yet the menu often plays with local Lombard traditions, reinterpreting classics with a lighter, more contemporary touch.

One example is the “Paella Bergamasca,” a revisited version of the local cassoeula – a hearty winter stew of pork and cabbage – cooked over wood fire and presented with the flair of a Spanish paella. That dish, served alongside polenta made from red corn with a fonduta of Branzi cheese and local salami, shows how La Braseria bridges the familiar and the surprising.

The kitchen also shows a deft hand with raw and cured preparations. A carpaccio of Angus beef, lifted with a rice wafer, teriyaki, and herb-infused extra virgin olive oil, is a study in balance. Orecchiette made in house, tossed with tiny sea strawberries and a dusting of Taggiasca olive powder, brings the coast inland with clarity.

Desserts follow the same thoughtful logic. A Valentine’s Day menu closed with “Due di cuori” – yogurt and strawberry – a light, clean finish to a meal built around grilled Piedmontese Fassona filet and variations on Jerusalem artichoke.

La Braseria also operates two “On The Road” outposts in Dalmine and Bergamo, offering street food by Luca Brasi. But the heart of the operation remains in Osio Sotto, where the dining room, the butcher’s counter, and even a few guest rooms create a complete, unhurried experience. The atmosphere is warm and direct – no fuss, just good ingredients handled with skill.

The Michelin recommendation confirms what regulars already know: this is a restaurant that respects its raw materials and lets technique serve taste, not the other way around.
