The story
On Palermo’s ancient Cassaro, Buatta Cucina Popolana turns the idea of home cooking into a modern, welcoming experience. The name says it all: “popolana” – food of the people. Here, that means Sicilian cuisine rooted in memory, made with ingredients from a network of small island producers.
The kitchen is led by chef Fabio Cardilio. Originally from Rome, Cardilio moved to Sicily and became one of the city’s most thoughtful interpreters of its gastronomic culture. He has honed his knowledge of local traditions over years, exploring the roots of the culinary heritage of the area. His approach is direct: the dishes speak only the local language. Vegetables and fruit come from artisan farmers, legumes from Slow Food presidia, meat from small organic breeders, and fish from local fishing fleets. The result is a cuisine that respects the territory and follows its seasons.
At the Palermo location, Cardilio offers a menu called Viva la Vita – a celebration of life and the gifts of land and sea. It changes daily, shaped by what is best at the market. Guests can choose a six-course tasting menu or order individual specials of the day. The spirit is one of generosity and authenticity – the kind of cooking that belongs to the community.
Buatta’s philosophy extends beyond the plate. The restaurant supports a network of small Sicilian artisans and producers, sourcing ingredients that express the identity of the many territories that make up the Island.
