Forty-year-old Carmelo Trentacosti, a disciple of Nino Graziano, developed his craft through important collaborations in prestigious Italian restaurants. His dishes are defined by kept flavors, never exaggerated, that highlight a unique refinement. The cuisine is a contemporary interpretation of Sicilian traditions, using excellent ingredients selected in constant harmony with the area’s culinary heritage.
